Carbone, the Village hotspot known for drawing crowds even during the pandemic, will open a pop-up in Southampton on Wednesday, Side Dish has learned.
“We will be respecting all the rules. There will be no place to dine, even outside — just nightly takeaway, but we wanted to open where we are and where so many of our customers are,” the source said. “It made a lot of sense in this environment. We are really excited about it.”
It’s not just that Carbone’s posh clientele is quarantining in the Hamptons, founders — chef Mario Carbone, Jeff Zalaznick and Rich Torrisi are too, sources said.
Carbone “will be running the show, as always,” the source said of the former Elm Street catering hall, which is expected to be open nightly.
The hope for the restaurant, where George and Amal Clooney once famously failed to get a last-minute reservation, is that a sit-down variety will occur when the quarantine ends.
“Everything we offer in New York, from the rotating specials to the classics will all be available,” the source said of the menu, which will include the spicy rigatoni vodka for $32; veal parmigiana for $69, and whole grilled branzino for $95.
